What to Ask Your Butcher For

Ask for a standing rib (prime rib), 4–7 ribs, 5–8 lb, with a fat cap.

Ingredients

  • 1 standing rib roast (5–8 lb)

  • 2–3 tbsp olive oil

  • 4 cloves garlic, minced

  • 2 tsp coarse salt

  • 1 tsp cracked black pepper

  • Fresh rosemary or thyme sprigs (optional)

Instructions

  • Let roast sit 1 hour. Rub with oil, garlic, salt, pepper, herbs.

  • Sear at 450°F (230°C) for 15 min, then roast at 325°F (160°C) until 125°F (52°C).

  • Rest 20–30 minutes before carving.

Total Cook Time

2–3 hours.

  • Horseradish cream

  • Yorkshire pudding

  • Garlic mash with glazed carrots.
