What to Ask Your Butcher For
Ask for a standing rib (prime rib), 4–7 ribs, 5–8 lb, with a fat cap.

Ingredients
1 standing rib roast (5–8 lb)
2–3 tbsp olive oil
4 cloves garlic, minced
2 tsp coarse salt
1 tsp cracked black pepper
Fresh rosemary or thyme sprigs (optional)
Instructions
Let roast sit 1 hour. Rub with oil, garlic, salt, pepper, herbs.
Sear at 450°F (230°C) for 15 min, then roast at 325°F (160°C) until 125°F (52°C).
Rest 20–30 minutes before carving.

2–3 hours.
