1. Preheat the oven to 375°F.
2. Bake uncovered for 40 minutes, or until the pork reaches an internal temperature of 165°F.
3. At the 40-minute mark, check the browning. If the roast is getting too dark, cover it loosely with foil and continue baking for an additional 20 minutes.
4. Remove the pork from the oven and tent it loosely with foil. Let it rest for 10–15 minutes.
5. Keep the vegetables in the oven to stay warm. • The vegetable juices can be used as drippings or to make a flavorful gravy.
6. Carve and serve: Remove the bone, then slice the meat to your desired thickness.
