Taken from the Loin section of the beef, the tenderloin, also known as filet in many languages, is made from an oblong shaped muscle which sits beneath the ribs and next to the backbone, the psoas major. Distinguished by its buttery, velvety texture that is both mellow and powerful in flavour, the tenderloin is known to be the most tender muscle in the entire beef carcass.
Rarely worked or exercised, the tenderloin is comprised of three major sections, the tail, butt and the center cut. While all sections are extremely tender and flavourful, the center cut, as presented here, is the most exclusive precious and delicate of them all.
Due its delicate nature, this cut calls for minimal preparation and many prefer it served blue or rare. It is often presented at special occasions or unique celebrations wrapped in bacon and accompanied by other delicacies such as lobster or shrimp.
